This is the kind of project that makes me want to raid the drawer of old electronics. I've been thinking about similar setups for kitchen recipe displays. E-ink is perfect for anything you glance at - no backlight burning your eyes at 6am, and the always-on nature means you don't have to wake up a screen. The trade-off of slow refresh is actually a feature when your data only changes every few minutes.
