Regardless of the larger impacts or moral issues most people aren't going to be willing to sit in dark cramped high-rise apartments eating tofu. At least not if they have other options.

Or even a full VR suit?
Personally I cannot put up with living in a city, but humans can adopt to surprising conditions of living.
But I am very much with you on the abundance mindset as the actual solution. Better tech, more of it.
