I would suggest gl.inet Comet Q. It only uses a single USB-C cable to do everything (wifi only of course, and it does need a USB-C port that can transfer DisplayPort in alternative mode). It also has tailscale.

Nice RAT, don't like always-on screen though. Anything works really. For example, a Hak5 screen crab plus a RPi plus a USB LTE modem could also be suffice. I don't know which stack this gl.inet device runs, but the Mifi I own from them (also usable in this regard) has a custom OpenWrt. Which can be removed to have a vanilla OpenWrt instead. Software stack FOSS is nice. Problem with all of this stuff, is closed source firmware in radios. Who knows which vulnerabilities reside in them, but given we are talking about wireless the sky is the limit with regards to who can assess.

Personally, I also specifically do not use the vPro NIC on my Intel machine.
